New Albemarle Cider; Old Fermenting Technique

Albemarle County cider makers using an ancient technique have corked the bottles on the one-of-a-kind drink. Castle Hill Cider are the only ones in the world to brew their cider in kvevris.

Four months ago, the big clay vats were filled with apple juice and buried. Now, their tasting room is open and pouring glasses of the "Levity" as well as three other types of cider.

"It's got just some really nice tannins and some depth and complexity like we've been hoping and it's been a great seller so we're excited about that," said Castle Hill Cider General Manager John Rhett.

Castle Hill Cider planted the apple trees back in 2009. While they are open for business, the official grand opening is set for the beginning of October.
